Crustless Bacon Quiche

Ingredients
  • 200g BMS bacon bits
  • 6 large eggs
  • 1 cup milk
  • 1 cup grated cheese (cheddar or mozzarella)
  • 1/2 cup cooked, crumbled bacon
  • 1/2 cup chopped onion
  • Salt and pepper, to taste
  • Optional: chopped fresh herbs (chives or parsley)
Method
  1. Preheat oven to 190°C. Grease a 9-inch pie dish or oven-safe baking dish.
  2. Cook bacon in a skillet until crispy. Remove from the skillet, drain on a paper towel, and crumble. Sauté the onions in the bacon fat until soft.
  3. In a large bowl, whisk together eggs, milk, salt, and pepper.
  4. Add cheese, crumbled bacon, and sautéed onions to the egg mixture. Stir to combine.
  5. Pour the mixture into the prepared dish.
  6. Bake for 30-35 minutes, or until the centre is set and the top is lightly golden.
  7. Let cool slightly before slicing. Serve warm and enjoy!
