Mushroom and Cheddar Gourmet Burgers

1 slice white or brown bread
60 ml (¼ cup) milk
2 medium onions, 1 finely chopped, 1 sliced into rings
1 cloves garlic, crushed,
about 10 (25 g) sun-dried tomatoes, finely chopped
5 ml (1 tsp) ground cumin
30 ml (2 Tbsp) chopped fresh parsley or 10 ml (2 tsp) dried
salt and freshly ground black pepper to taste
600g Topside beef mince
cooking oil for frying
6 hamburger rolls
4 big Flat Mushrooms
4 slices Cheddar Cheese
Directions
Soak bread in milk for a few minutes. Mix together with all other ingredients.
Shape mixture into six patties to firm up, then press lightly to flatten. Fry the onions in a pan and add a bit of sugar to get them caramelised
Heat oil in a heavy-based frying pan and fry patties for about 4 minutes on each side, or until done and brown.
At the same time grill the mushrooms until they are grilled and brown.
Place the patties on base of hamburger rolls, filled with lettuce, Place a slice of cheese on top, then a mushroom and to finish it off, place some of the caramelized onions. Serve with a sauce of choice and cover.
