Prego Rolls with Spicy Tomato Relish

6 Portuguese Rolls
8-10 Minute Steaks
Papaya skin (most important to tenderize meat)
1/2 cup white wine
4 cloves garlic crushed
3 chilies roughly chopped
2 lemons juiced
Ground black pepper
1 tbsp dried mixed herbs
1 red onion roughly chopped
500g cherry tomatoes
½ tsp cayenne pepper
Directions
Marinade the meat with the wine, garlic, chilli, lemon, pepper, papaya skin and herbs. Allow to marinade for a couple hours. The papaya skin releases a tenderising enzyme that will make the steaks so soft they will melt in your mouth. When you are ready to cook the steaks drain the marinade and set it aside. Heat up the pan until it is smoking hot.
Meanwhile in a pan with a bit of oil brown the onions. Once they have taken a bit of colour add the left over marinade that you drained off from the steaks.This is perfectly healthy use as it is getting cooked. Add the cherry tomatoes and cayenne pepper. Simmer away until the tomatoes fall apart. Season with salt, pepper and a bit of sugar.
In the searing hot pan, put the steaks on for about 2 minutes on each side. Toast the Rolls in the oven for a couple minutes so the go crispy. Put a piece of steak on the roll, spoon over some of the relish and get stuck in.
