Country-Style Braised Pork Shanks

Ingredients

  • 4 pork shanks about 1kg                                                                                    
  • Salt and black pepper
  • 1 cup onions, chopped                                                                                       
  • 1 cup carrots, chopped
  • 1 cup celery, chopped                                                                                        
  • 500g mushrooms
  • 2 tablespoons tomato paste                                                                             
  • 1½ cups beef stock     
  • 1⅓ cups chicken stock                                                                                        
  • 350g beer
  • 6 cloves garlic, chopped                                                                                     
  • 4 sprigs fresh rosemary
  • 4 sprigs fresh thyme                                                                                           
  • 2 potatoes cut into chunks
  • 1 teaspoon coarse sea salt                                                                                
  • 1 cup flour

Method

  1. Season the flour with salt and black pepper, then coat pork shanks in seasoned flour. 
  2. Heat oil in a pot and sear shanks for 2 minutes per side. Remove and set aside.
  3. In the same pot, cook celery, carrots, onions, mushrooms, potatoes, and garlic for 5-7 minutes.
  4. Add beer to loosen tasty bits from the pan. Then, add stock, herbs, salt, pepper, and tomato paste. Simmer for 5 minutes. 
  5. Slow Cook: Remove some veggies and stock, return pork to the pot, then add everything back. Cover and bake at 180°C for 3 hours.
  6. Remove excess grease, mix the sauce, and serve with veggies. Enjoy!
