Ingredients
- 4 pork shanks about 1kg
- Salt and black pepper
- 1 cup onions, chopped
- 1 cup carrots, chopped
- 1 cup celery, chopped
- 500g mushrooms
- 2 tablespoons tomato paste
- 1½ cups beef stock
- 1⅓ cups chicken stock
- 350g beer
- 6 cloves garlic, chopped
- 4 sprigs fresh rosemary
- 4 sprigs fresh thyme
- 2 potatoes cut into chunks
- 1 teaspoon coarse sea salt
- 1 cup flour
Method
- Season the flour with salt and black pepper, then coat pork shanks in seasoned flour.
- Heat oil in a pot and sear shanks for 2 minutes per side. Remove and set aside.
- In the same pot, cook celery, carrots, onions, mushrooms, potatoes, and garlic for 5-7 minutes.
- Add beer to loosen tasty bits from the pan. Then, add stock, herbs, salt, pepper, and tomato paste. Simmer for 5 minutes.
- Slow Cook: Remove some veggies and stock, return pork to the pot, then add everything back. Cover and bake at 180°C for 3 hours.
- Remove excess grease, mix the sauce, and serve with veggies. Enjoy!
