Ingredients
- 1.2 kg lamb breast boneless
- Salt and black pepper, to taste
- 2 tablespoon olive oil
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 1 cup spinach (lightly steamed or wilted)
- 1 cup grated cheese (mozzarella or cheddar)
- ½ cup breadcrumbs (optional for texture)
- 1 teaspoon dried herbs (oregano or thyme)
- Kitchen string or toothpicks
Method
- Heat 1 tablespoon of olive oil in a pan over medium heat. Sauté the onions and garlic until they are soft and golden.
- Add the herbs and stir for 1 minute. Set the mixture aside to cool slightly.
- Lay the beef flat and season both sides with salt and pepper, evenly spread the sautéed onion mixture over the lamb. Layer with spinach or kale and grated cheese, sprinkle breadcrumbs on top.
- Carefully roll the beef into a tight log. Secure the log with kitchen string or toothpicks.
- To brown the roll. Preheat the oven to 180°C.
- In a large oven-safe pan, heat 1 tablespoon of oil. Sear the beef roll on all sides until browned, approximately 5 to 7 minutes.
- Transfer the pan to the oven and bake uncovered for 45 to 60 minutes, or until the meat is cooked through. 2. Let the lamb rest for 10 minutes before slicing.
