Pork Sausage & Bacon Breakfast Casserole

Ingredients

  • 6 pork sausages
  • 400g of bacon bits, cooked crispy
  • 1 ciabatta bread
  • 6 eggs, lightly beaten
  • 2 cups of milk
  • 1 cup of shredded cheddar cheese
  • 1½ cups of shredded mozzarella cheese
  • 8 spring onions, chopped(optional)
  • salt and pepper

 

Method

  1. Preheat your oven to 180°C.
  2. Grease your baking dish and then layer all of your torn bread across the bottom. Slice your cooked sausage  and sprinkle all over the top.  Set aside.
  3. In a mixing bowl, whisk together your eggs and milk and then stir in your cheeses, onions, and crispy bacon along with a sprinkle of salt and pepper. Pour this mixture over your casserole dish.
  4. Put the tray in the oven to bake.
  5. Bake about 45 minutes or until the edges are browned and the center is not wobbly.
  6. Remove, allow to rest five minutes, slice into squares and serve.
