{"id":24560,"date":"2024-03-06T13:16:02","date_gmt":"2024-03-06T13:16:02","guid":{"rendered":"https:\/\/bluffmeatsupply.co.za\/newsite\/?post_type=recipe&#038;p=24560"},"modified":"2025-11-24T11:44:36","modified_gmt":"2025-11-24T11:44:36","slug":"pineapple-gammon","status":"publish","type":"recipe","link":"https:\/\/bluffmeatsupply.co.za\/touchscreen\/index.php\/recipe\/pineapple-gammon\/","title":{"rendered":"Pineapple Gammon"},"content":{"rendered":"<h4>Ingredients<\/h4>\n<ul>\n<li>7-8kg gammon (bone-in)<\/li>\n<li>1\/2 cup brown sugar<\/li>\n<li>1\/3 cup maple syrup<\/li>\n<li>1 tsp Chinese five spice<\/li>\n<li>5 x 440g cans pineapple slices in juice, drain and reserve juice<\/li>\n<li>150g glace cherries<\/li>\n<li>2 cups water<\/li>\n<\/ul>\n<h4>Method<\/h4>\n<p><strong>Step 1<\/strong><\/p>\n<ul>\n<li>Preheat oven to 180\u00baC.<\/li>\n<li>Place an oven shelf in the lowest position of the oven and remove the other shelves.<\/li>\n<li>Line a large roasting pan with non-stick baking paper.<\/li>\n<\/ul>\n<p><strong>Step 2<\/strong><\/p>\n<ul>\n<li>Place the brown sugar, maple syrup, Chinese five spice and 125ml (1\/2 cup) of reserved pineapple juice from cans in a small saucepan.<\/li>\n<li>Cook over low heat, stirring, for 2-3 minutes until sugar dissolves.<\/li>\n<li>Bring to a gentle simmer.<\/li>\n<li>Simmer for 5 minutes until reduced slightly.<\/li>\n<\/ul>\n<p><strong>Step 3<\/strong><\/p>\n<ul>\n<li>Use a small sharp knife to cut around the shank of gammon in a zig-zag pattern, about 10cm from end.<\/li>\n<li>Carefully run knife under rind around the edge of the gammon and carefully lift off<\/li>\n<li>the rind in one piece by running your fingers between the rind and the fat.<\/li>\n<\/ul>\n<p><strong>Step 4<\/strong><\/p>\n<ul>\n<li>Place the pineapple rings on the gammon and place a glace cherry in the centre of pineapple rings using a toothpick (or cloves) to secure the cherries.<\/li>\n<\/ul>\n<p><strong>Step 5<\/strong><\/p>\n<ul>\n<li>Pour water into prepared pan.<\/li>\n<li>Place the gammon on a wire rack in the pan.<\/li>\n<li>Wrap exposed shank in foil.<\/li>\n<li>Brush a third of the glaze over pineapple.<\/li>\n<li>Bake for 40 minutes.<\/li>\n<li>Pour over half remaining glaze.<\/li>\n<li>Bake for 40 minutes until golden.<\/li>\n<li>Brush with remaining glaze.<\/li>\n<li>Set aside for 15 minutes to rest.<\/li>\n<li>Remove toothpicks before carving.<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<div class=\"hide-redirect-shortcode\">\t\t<meta http-equiv=\"refresh\" content=\"60; url=https:\/\/bluffmeatsupply.co.za\/touchscreen\/\">\r\n\t\tPlease wait while you are redirected...or <a href=\"https:\/\/bluffmeatsupply.co.za\/touchscreen\/\">Click Here<\/a> if you do not want to wait.\r\n<\/div>\n<div class=\"qrcpromodalwrapper\" style=\"margin: 20px 0;\"><button type=\"button\" class=\"qrc-modal-toggle\" id=\"popModal_ex2\" style=\"background:#d81313;color:#ffffff;border: 1px solid #ce1e1e;border-radius:20px;padding: 6px 14px;font-size:17px\">Click To View On Phone<\/button><div class=\"qrc_modal\"><div class=\"qrc-overlay qrc-modal-toggle\"><\/div><div class=\"qrc-modal-wrapper qrc-modal-transition\"><span class=\"qrc-modal-toggle\">&times;<\/span><div class=\"qrcswholewtapper\" style=\"text-align:left;\"><div class=\"qrcprowrapper\"  id=\"qrcwraa2leds\"><div class=\"qrc_canvass\" id=\"qrc_cuttenpages_2\" style=\"display:inline-block\" data-text=\"https:\/\/bluffmeatsupply.co.za\/touchscreen\/index.php\/recipe\/pineapple-gammon\/\"><\/div><div><a download=\"Pineapple Gammon.png\" class=\"qrcdownloads\" id=\"worign\">\r\n           <button type=\"button\" style=\"min-width:250px;background:#c0081d;color:#ffffff;font-weight: 600;border: 1px solid #e2141b;border-radius:20px;font-size:17px;padding: 6px 0;\" class=\"uqr_code_btn\">Scan QR \ud83e\udc0b<\/button>\r\n           <\/a><\/div><\/div><\/div><\/div><\/div><\/div>","protected":false},"excerpt":{"rendered":"<p>Ingredients 7-8kg gammon (bone-in) 1\/2 cup brown sugar 1\/3 cup maple syrup 1 tsp Chinese five spice 5 x 440g cans pineapple slices in juice, drain and reserve juice 150g glace cherries 2 cups water Method Step 1 Preheat oven to 180\u00baC.
