pepper to taste<\/li>\n<li>1 onion, peeled and cut into wedges<\/li>\n<li>Small handful fresh thyme sprigs<\/li>\n<li>Small handful rosemary sprigs<\/li>\n<li>Small handful fresh sage leaves<\/li>\n<li>1 head garlic, halved<\/li>\n<li>100g butter, melted<\/li>\n<\/ul>\n<p><strong>For the garlic butter:<\/strong><\/p>\n<ul>\n<li>Handful fresh chives, chopped<\/li>\n<li>Handful fresh flat-leaf parsley, chopped<\/li>\n<li>120g butter, melted<\/li>\n<li>Salt &amp; pepper to taste<\/li>\n<li>1 garlic clove, peeled and minced<\/li>\n<\/ul>\n<p><strong>Step 1<\/strong><\/p>\n<ul>\n<li>Preheat to 220\u00baC.<\/li>\n<li>Position the oven rack on the lower third of the oven.<\/li>\n<\/ul>\n<p><strong>Step 2<\/strong><\/p>\n<ul>\n<li>Pat the turkey dry with kitchen paper and generously season the cavity with salt.<\/li>\n<li>Stuff the cavity with the onion, thyme, rosemary, sage and halved head of garlic.<\/li>\n<li>Tie the legs together with the kitchen string.<\/li>\n<\/ul>\n<p><strong>Step 3<\/strong><\/p>\n<ul>\n<li>Transfer the turkey to a roasting dish.<\/li>\n<li>Brush the melted butter all over, then season the outside generously with salt.<\/li>\n<li>Place in the preheated oven and immediately reduce the heat to 180\u00baC.<\/li>\n<\/ul>\n<p><strong>Step 4<\/strong><\/p>\n<ul>\n<li>Roast, basting every 45 minutes with the juices in the dish until the juices run clear when you cut between the leg and thigh, approximately 3 \u2013 4 hours.<\/li>\n<\/ul>\n<p><strong>Step 5<\/strong><\/p>\n<ul>\n<li>Cover the cooked turkey with foil and allow to rest for 20 minutes before carving.<\/li>\n<\/ul>\n<p><strong>Step 6<\/strong><\/p>\n<ul>\n<li>For the herb and garlic butter, combine the chives, parsley, 120g melted butter, salt and minced garlic in a small mixing bowl.<\/li>\n<li>Drizzle over the turkey and serve immediately.<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<p>Source: Developed by the BMS Team<\/p>\n\t\t<meta http-equiv=\"refresh\" content=\"60;
