{"id":29462,"date":"2024-11-14T13:52:41","date_gmt":"2024-11-14T13:52:41","guid":{"rendered":"https:\/\/bluffmeatsupply.co.za\/?post_type=recipe&#038;p=29462"},"modified":"2025-11-24T11:34:34","modified_gmt":"2025-11-24T11:34:34","slug":"beef-brisket-pot-roast","status":"publish","type":"recipe","link":"https:\/\/bluffmeatsupply.co.za\/touchscreen\/index.php\/recipe\/beef-brisket-pot-roast\/","title":{"rendered":"Beef Brisket Pot Roast"},"content":{"rendered":"<h4><strong>Ingredients<\/strong><\/h4>\n<ul>\n<li>1.5kg boned and rolled beef brisket<\/li>\n<li>5 tbsp\u00a0vegetable oil<\/li>\n<li>large knob of\u00a0butter<\/li>\n<li>2\u00a0large onions halved and sliced<\/li>\n<li>2-3 celery sticks, finely chopped<\/li>\n<li>2\u00a0carrots sliced<\/li>\n<li>200-250g large flat mushrooms stalks chopped and heads thinly sliced<\/li>\n<li>500-550ml bottle stout beer<\/li>\n<li>a few fresh\u00a0thyme sprigs<\/li>\n<li>2\u00a0bay leaves<\/li>\n<li>1-2 tsp\u00a0light muscovado sugar<\/li>\n<li>500g\u00a0parsnips cut into wedges<\/li>\n<li>1 tbsp\u00a0Dijon mustard<\/li>\n<li>chopped fresh parsley or thyme to serve<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<h4><b>Method<\/b><\/h4>\n<ol>\n<li>Preheat the oven to oven 170\u00b0C. Wash and dry brisket and season. Heat 2 tablespoons of oil in a deep casserole and brown beef all over. Remove from pan. Turn down heat, add butter and fry the onions, celery, carrots and mushroom stalks for 6-8 minutes.<\/li>\n<li>Return beef to pan and add beer, thyme, bay leaves and sugar. Add water if necessary so the liquid comes about two-thirds up the beef. Season, bring to a simmer, cover tightly, and cook in the oven for 20 minutes. Reduce heat to 140\u00b0C and cook for 2 hours, turning twice, until tender.<\/li>\n<li>An hour before the beef is done, toss the parsnips in oil, season and roast on a baking tray above the beef for 50 mins &#8211; 1 hour until tender, turning once.<\/li>\n<li>Turn oven up to 170\u00b0C. Lift out the beef, tent with foil and keep warm. Stir the parsnips and mushroom caps into the beef juices. Check seasoning; add water if needed. Cover and cook in the oven for 20-25 minutes until mushrooms are tender.<\/li>\n<li>To serve, use a slotted spoon to remove vegetables and arrange round the beef. Spoon off the excess fat from the juices, then whisk in the mustard and pour into a jug. Moisten the beef with a little juice and scatter with parsley or thyme.
