{"id":32751,"date":"2025-04-15T11:02:50","date_gmt":"2025-04-15T11:02:50","guid":{"rendered":"https:\/\/bluffmeatsupply.co.za\/touchscreen\/?post_type=recipe&#038;p=32751"},"modified":"2025-11-25T12:27:33","modified_gmt":"2025-11-25T12:27:33","slug":"creamy-chicken-stew","status":"publish","type":"recipe","link":"https:\/\/bluffmeatsupply.co.za\/touchscreen\/index.php\/recipe\/creamy-chicken-stew\/","title":{"rendered":"Creamy Chicken Stew"},"content":{"rendered":"<h4>Ingredients<\/h4>\n<ul>\n<li>8 chicken thighs<\/li>\n<li><span style=\"font-weight: 400;\">3 leeks, halved and finely sliced<\/span><\/li>\n<li><span style=\"font-weight: 400;\">2 tablespoon olive oil, plus extra if needed<\/span><\/li>\n<li><span style=\"font-weight: 400;\">1 tablespoon butter<\/span><\/li>\n<li><span style=\"font-weight: 400;\">500ml\u00a0chicken stock<\/span><\/li>\n<li><span style=\"font-weight: 400;\">1 tablespoon Dijon mustard<\/span><\/li>\n<li><span style=\"font-weight: 400;\">75g\u00a0Greek yoghurt<\/span><\/li>\n<li><span style=\"font-weight: 400;\">200g frozen peas<\/span><\/li>\n<li><span style=\"font-weight: 400;\">3 tablespoon\u00a0dried or fresh breadcrumbs<\/span><\/li>\n<li><span style=\"font-weight: 400;\">small bunch of parsley, finely chopped<\/span><\/li>\n<\/ul>\n<h4>Method<\/h4>\n<ol>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Tip the leeks and oil into a flameproof\u00a0casserole dish on low heat, add the butter and cook everything very gently for 10 minutes or until the leeks are soft.<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Put the chicken, skin-side down, in a large non-stick frying pan on medium heat. Cook until the skin browns, then turn and brown the other side. You shouldn\u2019t need any oil, but if the skin starts to stick. Add a little. Add the chicken to the leeks, leaving behind any fat in the pan.<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Add the stock to the dish and bring to a simmer, season well, cover and cook for 30 mins on low. Stir in the mustard, Greek yoghurt and peas and bring to a simmer. You should have quite a bit of sauce.<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">When you\u2019re ready to serve, put the grill on.
