{"id":32777,"date":"2025-04-16T10:24:04","date_gmt":"2025-04-16T10:24:04","guid":{"rendered":"https:\/\/bluffmeatsupply.co.za\/touchscreen\/?post_type=recipe&#038;p=32777"},"modified":"2025-09-18T09:02:17","modified_gmt":"2025-09-18T09:02:17","slug":"beef-stew-and-dumplings","status":"publish","type":"recipe","link":"https:\/\/bluffmeatsupply.co.za\/touchscreen\/index.php\/recipe\/beef-stew-and-dumplings\/","title":{"rendered":"Beef Stew and Dumplings"},"content":{"rendered":"<p><strong>Ingredients<\/strong><\/p>\n<p><strong>For the beef stew<\/strong><\/p>\n<ul>\n<li>500g blade, cubed<\/li>\n<li>4 tbsp olive oil<\/li>\n<li>2 onions, roughly chopped<\/li>\n<li>1 large carrot, peeled, roughly chopped<\/li>\n<li>1 celery stalk, trimmed, roughly chopped<\/li>\n<li>\u00bd swede, peeled, roughly chopped<\/li>\n<li>2 tbsp plain flour<\/li>\n<li>1 litre beef stock<\/li>\n<li>400m red wine<\/li>\n<li>2 bay leaves<\/li>\n<li>salt and freshly ground black pepper<\/li>\n<li>For the suet dumplings<\/li>\n<li>125g plain flour<\/li>\n<li>65g shredded suet<\/li>\n<li>1 tsp baking powder<\/li>\n<li>1 tsp salt<\/li>\n<li>4-5 tbsp cold water, to mix<\/li>\n<\/ul>\n<p><strong>For the herby oat dumplings<\/strong><\/p>\n<ul>\n<li>70g fine oatmeal<\/li>\n<li>70g plain flour<\/li>\n<li>1 tsp baking powder<\/li>\n<li>1 tsp salt<\/li>\n<li>1 tbsp chopped fresh parsley<\/li>\n<li>2 tsp chopped fresh rosemary leaves<\/li>\n<li>2 tsp fresh thyme leaves<\/li>\n<li>80g chilled butter<\/li>\n<li>4-5 tbsp cold water, to mix<\/li>\n<\/ul>\n<h2 class=\"ssrcss-18258zg-Heading e10rt3ze0\">Method<\/h2>\n<ol class=\"ssrcss-1o787j8-OrderedList ecyv4820\">\n<li class=\"ssrcss-1uix24b-Stack e1y4nx260\">\n<div class=\"ssrcss-15tc05p-ListItemText e10q0gy40\">\n<p>For the beef stew, heat the oil in a large, lidded casserole over a medium heat. Fry the chuck steak for 3-4 minutes, until browned on all sides. Remove from the pan and set aside.<\/p>\n<\/div>\n<\/li>\n<li class=\"ssrcss-1uix24b-Stack e1y4nx260\">\n<div class=\"ssrcss-15tc05p-ListItemText e10q0gy40\">\n<p>Add the onions, carrot, celery and swede and fry for 6-8 minutes, or until golden-brown, adding a little more olive oil if need be. Season with salt and pepper.<\/p>\n<\/div>\n<\/li>\n<li class=\"ssrcss-1uix24b-Stack e1y4nx260\">\n<div class=\"ssrcss-15tc05p-ListItemText e10q0gy40\">\n<p>Add the plain flour and stir well. Cook for 1-2 minutes, or until it turns a nut-brown colour. Pour in the stock and stir well until the sauce thickens.<\/p>\n<\/div>\n<\/li>\n<li class=\"ssrcss-1uix24b-Stack e1y4nx260\">\n<div class=\"ssrcss-15tc05p-ListItemText e10q0gy40\">\n<p>Return the beef to the casserole, add the red wine and bay leaves and bring the mixture to the boil. Reduce the heat until the mixture is simmering, then leave to simmer gently for 1 hour with the lid slightly ajar.<\/p>\n<\/div>\n<\/li>\n<li class=\"ssrcss-1uix24b-Stack e1y4nx260\">\n<div class=\"ssrcss-15tc05p-ListItemText e10q0gy40\">\n<p>Meanwhile, for the suet dumplings, combine the flour, suet, baking powder and salt in a bowl until well combined. Add the water gradually, stirring the mixture with your fingers, until it comes together as a slightly sloppy dough. Shape the dough into balls roughly the size of a plum.<\/p>\n<\/div>\n<\/li>\n<li class=\"ssrcss-1uix24b-Stack e1y4nx260\">\n<div class=\"ssrcss-15tc05p-ListItemText e10q0gy40\">\n<p>For the herby oat dumplings, combine the oatmeal, flour, baking powder, salt and herbs in a mixing bowl until well combined. Grate the chilled butter into the bowl and mix again. Bring the dough together with your fingers, gradually adding enough water, as before, to make a wet dough. Shape the dough into plum-sized balls.<\/p>\n<\/div>\n<\/li>\n<li class=\"ssrcss-1uix24b-Stack e1y4nx260\">\n<div class=\"ssrcss-15tc05p-ListItemText e10q0gy40\">\n<p>When the stew has been simmering for an hour, season it again with salt and pepper, if necessary. Put the dumplings on top of the stew, cover the casserole with the lid, and cook for a further 15-20 minutes, or until the dumplings have proudly puffed up.
