{"id":32805,"date":"2025-04-17T09:42:06","date_gmt":"2025-04-17T09:42:06","guid":{"rendered":"https:\/\/bluffmeatsupply.co.za\/touchscreen\/?post_type=recipe&#038;p=32805"},"modified":"2025-11-24T11:35:47","modified_gmt":"2025-11-24T11:35:47","slug":"oven-roasted-lamb-shank","status":"publish","type":"recipe","link":"https:\/\/bluffmeatsupply.co.za\/touchscreen\/index.php\/recipe\/oven-roasted-lamb-shank\/","title":{"rendered":"Oven Roasted Lamb Shank"},"content":{"rendered":"<h4>Ingredients<\/h4>\n<ul>\n<li><span style=\"font-weight: 400;\">4 \u2013 6 Lamb Shanks (trimmed of excess fat)<\/span><\/li>\n<li><span style=\"font-weight: 400;\">5 Large carrots (Peeled)<\/span><\/li>\n<li><span style=\"font-weight: 400;\">1 Large onion<\/span><\/li>\n<li><span style=\"font-weight: 400;\">2 cloves garlic<\/span><\/li>\n<li><span style=\"font-weight: 400;\">400ml Lamb stock<\/span><\/li>\n<li><span style=\"font-weight: 400;\">15ml Worcestershire sauce<\/span><\/li>\n<li><span style=\"font-weight: 400;\">\u00bd Cup red wine<\/span><\/li>\n<li><span style=\"font-weight: 400;\">I Tin whole tomatoes<\/span><\/li>\n<li><span style=\"font-weight: 400;\">15ml Tomato paste<\/span><\/li>\n<li><span style=\"font-weight: 400;\">1 Tablespoon Thyme<\/span><\/li>\n<li><span style=\"font-weight: 400;\">Olive Oil<\/span><\/li>\n<li><span style=\"font-weight: 400;\">Salt &amp; pepper<\/span><\/li>\n<li><span style=\"font-weight: 400;\">Flour for coating the shanks<\/span><\/li>\n<\/ul>\n<h4>Method<\/h4>\n<p><span style=\"font-weight: 400;\">1.Trimming all the excess fat and connective tissue from the Shanks, allowing the meat to brown evenly and remain tender. Once you have cut the fat off the shanks, season with a mix of flour, salt and pepper and coat the shanks, dusting off any excess flour before cooking. Heat a tablespoon of olive oil in a large ovenproof casserole on the stove and brown the shanks in batches. Remove from the pan and set aside.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">2.Chop your onion and garlic and saut\u00e9 over medium heat until soft and lightly browned. Peel and slice your carrots and add to the pan, continuing to cook over medium heat, stirring often.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">3.Then add the dried Thyme, lamb stock, Worcestershire sauce and red wine to the pot. Puree your tinned tomatoes, add them and the tomato paste, stir to combine. I also add a teaspoon or two of brown sugar to cut through the acidity of the tomatoes. Place the lamb shanks back in the pot, cover and cook in a preheated oven at 150\u00b0c.
