{"id":32807,"date":"2025-04-17T09:59:45","date_gmt":"2025-04-17T09:59:45","guid":{"rendered":"https:\/\/bluffmeatsupply.co.za\/touchscreen\/?post_type=recipe&#038;p=32807"},"modified":"2025-11-25T12:43:22","modified_gmt":"2025-11-25T12:43:22","slug":"lamb-stew","status":"publish","type":"recipe","link":"https:\/\/bluffmeatsupply.co.za\/touchscreen\/index.php\/recipe\/lamb-stew\/","title":{"rendered":"Lamb Stew"},"content":{"rendered":"<h4>Ingredients<\/h4>\n<ul>\n<li><span style=\"font-weight: 400;\">1kg lamb knuckles<\/span><\/li>\n<li><span style=\"font-weight: 400;\">4 \u2013 5 carrots peeled and cut into pieces<\/span><\/li>\n<li><span style=\"font-weight: 400;\">4 \u2013 5 medium potatoes, peeled and cut into quarters<\/span><\/li>\n<li><span style=\"font-weight: 400;\">1 onion, chopped<\/span><\/li>\n<li><span style=\"font-weight: 400;\">3 garlic cloves, crushed<\/span><\/li>\n<li><span style=\"font-weight: 400;\">400ml lamb or beef stock<\/span><\/li>\n<li><span style=\"font-weight: 400;\">30 ml Worcestershire sauce<\/span><\/li>\n<li><span style=\"font-weight: 400;\">\u00bd cup quality red wine<\/span><\/li>\n<li><span style=\"font-weight: 400;\">1 large tin tomato paste or 2 x sachets<\/span><\/li>\n<li><span style=\"font-weight: 400;\">1 tbsp. fresh thyme or used freeze-dried<\/span><\/li>\n<li><span style=\"font-weight: 400;\">Olive Oil<\/span><\/li>\n<li><span style=\"font-weight: 400;\">1 x tsp. Dijon Mustard<\/span><\/li>\n<li><span style=\"font-weight: 400;\">Salt &amp; pepper<\/span><\/li>\n<\/ul>\n<h4>Method<\/h4>\n<ol>\n<li><span style=\"font-weight: 400;\"> Heat two tablespoons of olive oil in a large casserole pot and brown the lamb in batches. When the lamb is browned, remove it from the pot and set aside.<\/span><\/li>\n<li><span style=\"font-weight: 400;\"> Add the chopped onion and garlic to the pot and saut\u00e9 over medium heat until soft and lightly browned. I recommend adding a splash of water to loosen all the sticky bits from the bottom of the pot. Next, in go the carrots. Continuing cooking over medium heat for a few minutes, stirring often.<\/span><\/li>\n<li><span style=\"font-weight: 400;\"> Add the thyme, mustard, lamb stock, red wine, Worcestershire sauce, tomato paste, and 250ml water and stir to combine. I also recommend adding two teaspoons of brown sugar to help cut through the acidity of the tomato paste. Place the lamb back in the pot, stir well and cover. Simmer for 1 \u00bd \u2013 2 hours, remembering to stir often.<\/span><\/li>\n<li><span style=\"font-weight: 400;\"> While the stew is simmering, peel and cut the potatoes. I recommend par-cooking the potatoes before adding them to the pot. After approximately an hour, add the par-cooked potatoes and cook for 30 minutes, or until the meat is tender and the sauce has thickened.<\/span><\/li>\n<li><span style=\"font-weight: 400;\"> You can also add petit pois peas just before serving, which gives the stew a wonderful extra dimension of flavour.
