{"id":33073,"date":"2025-05-02T06:41:07","date_gmt":"2025-05-02T06:41:07","guid":{"rendered":"https:\/\/bluffmeatsupply.co.za\/touchscreen\/?post_type=recipe&#038;p=33073"},"modified":"2025-09-26T12:39:59","modified_gmt":"2025-09-26T12:39:59","slug":"shin-stew","status":"publish","type":"recipe","link":"https:\/\/bluffmeatsupply.co.za\/touchscreen\/index.php\/recipe\/shin-stew\/","title":{"rendered":"Shin Stew"},"content":{"rendered":"<h4 id=\"ingredients-section\" class=\"type-h2 text-center mb-40 md:mb-48 astro-2g6xnrln\">Ingredients<\/h4>\n<div class=\"recipe-col-container--item bg-white astro-2g6xnrln\">\n<div class=\"ingredients-rich-text\">\n<ul>\n<li>1kg beef shin bone removed, trimmed and cut into 5cm pieces<\/li>\n<li class=\"type-body\">olive oil<\/li>\n<li class=\"type-body\">2 red onions, peeled and roughly chopped<\/li>\n<li class=\"type-body\">3 carrots, peeled and roughly chopped<\/li>\n<li class=\"type-body\">3 sticks of celery, trimmed and roughly chopped<\/li>\n<li class=\"type-body\">4 cloves of garlic, unpeeled<\/li>\n<li class=\"type-body\">a few sprigs of fresh rosemary<\/li>\n<li class=\"type-body\">2 bay leaves<\/li>\n<li class=\"type-body\">a small handful of dried porcini<\/li>\n<li class=\"type-body\">1 cinnamon stick<\/li>\n<li class=\"type-body\">sea salt and freshly ground black pepper<\/li>\n<li class=\"type-body\">1 tablespoon flour<\/li>\n<li class=\"type-body\">2 x 400g tins good-quality plum tomatoes<\/li>\n<li class=\"type-body\">\u2154 of a bottle of Chianti<\/li>\n<\/ul>\n<h4>Method<\/h4>\n<\/div>\n<ol>\n<li>Preheat your oven to 180\u00baC\/gas 4. In a heavy-bottomed ovenproof saucepan, heat a splash of olive oil and gently fry the onions, carrots, celery, garlic, herbs, porcini and cinnamon for 5 minutes until softened slightly.<\/li>\n<li>Meanwhile, toss the pieces of beef in a little seasoned flour, shaking off any excess.<\/li>\n<li>Add the meat to the pan and stir everything together, then add the tomatoes, wine and a pinch of salt and pepper.<\/li>\n<li>Gently bring to the boil, cover with a double-thickness piece of tinfoil and a lid and place in your preheated oven for 3 hours or until the beef is meltingly tender and can be broken up with a spoon.<\/li>\n<li>Taste and check the seasoning, remove the cinnamon stick and rosemary sprigs and serve.<\/li>\n<\/ol>\n<p>&nbsp;<\/p>\n<p>Source: https:\/\/www.jamieoliver.com\/recipes\/beef\/melt-in-your-mouth-shin-stew\/<\/p>\n<div class=\"hide-redirect-shortcode\">\t\t<meta http-equiv=\"refresh\" content=\"60;
