{"id":33086,"date":"2025-05-02T07:12:33","date_gmt":"2025-05-02T07:12:33","guid":{"rendered":"https:\/\/bluffmeatsupply.co.za\/touchscreen\/?post_type=recipe&#038;p=33086"},"modified":"2025-09-26T12:27:27","modified_gmt":"2025-09-26T12:27:27","slug":"grilled-rib-eye-steaks-with-okra-suya-and-cucumber-yogurt-sauce","status":"publish","type":"recipe","link":"https:\/\/bluffmeatsupply.co.za\/touchscreen\/index.php\/recipe\/grilled-rib-eye-steaks-with-okra-suya-and-cucumber-yogurt-sauce\/","title":{"rendered":"Grilled Rib Eye Steaks with Okra Suya and Cucumber-Yoghurt Sauce"},"content":{"rendered":"<h4><strong>Ingredients<\/strong><\/h4>\n<h4><strong>Cucumber-Yogurt Sauce<\/strong><\/h4>\n<ul>\n<li>1 cup plain full cream strained Greek-style yoghurt<\/li>\n<li>\u00bc cup fresh lemon juice (from 2 lemons)<\/li>\n<li>\u00bd teaspoon kosher salt<\/li>\n<li>1 medium English cucumber, peeled, seeded, and thinly sliced crosswise<\/li>\n<\/ul>\n<h4>Steak and Vegetables<\/h4>\n<ul>\n<li>1kg bone-in rib eye steaks<\/li>\n<li>340g fresh okra, trimmed<\/li>\n<li>350g red onions<\/li>\n<li>\u00bd cup unsalted butter, softened<\/li>\n<li>3 tablespoons suya spice mix , divided, plus more to taste<\/li>\n<li>4 3\/4 teaspoons kosher salt, divided<\/li>\n<li>1 tablespoon neutral cooking oil (such as canola oil or grapeseed oil), plus more for brushing<\/li>\n<li>Weber Applewood chunks<\/li>\n<\/ul>\n<h4><strong>Method<\/strong><\/h4>\n<h4 id=\"mntl-sc-block_3-0\" class=\"comp mntl-sc-block foodandwine-sc-block-subheading mntl-sc-block-subheading\"><span class=\"mntl-sc-block-subheading__text\">Cucumber-yoghurt sauce<\/span><\/h4>\n<ol id=\"mntl-sc-block_4-0\" class=\"comp mntl-sc-block mntl-sc-block-startgroup mntl-sc-block-group--OL\">\n<li id=\"mntl-sc-block_5-0\" class=\"comp mntl-sc-block mntl-sc-block-startgroup mntl-sc-block-group--LI\">\n<p id=\"mntl-sc-block_6-0\" class=\"comp mntl-sc-block mntl-sc-block-html\">Stir together yoghurt, lemon juice, and salt in a medium bowl until well combined. Add cucumber, stirring to dress cucumber in yogurt mixture.<\/p>\n<\/li>\n<\/ol>\n<h4 id=\"mntl-sc-block_10-0\" class=\"comp mntl-sc-block foodandwine-sc-block-subheading mntl-sc-block-subheading\"><span class=\"mntl-sc-block-subheading__text\">Steak and vegetables<\/span><\/h4>\n<ol id=\"mntl-sc-block_11-0\" class=\"comp mntl-sc-block mntl-sc-block-startgroup mntl-sc-block-group--OL\">\n<li id=\"mntl-sc-block_12-0\" class=\"comp mntl-sc-block mntl-sc-block-startgroup mntl-sc-block-group--LI\">\n<p id=\"mntl-sc-block_13-0\" class=\"comp mntl-sc-block mntl-sc-block-html\">Wrap steaks in paper towels, and let stand at room temperature 1 hour. Meanwhile, bring a large pot of water to a boil over medium-high. Fill a large bowl with ice water; set aside. Add okra to boiling water, and cook until bright green and barely tender, 2 to 3 minutes. Using a spider or slotted spoon, transfer okra to ice water, and let cool 2 minutes; remove from ice water, and pat dry using paper towels. Add onions to boiling water, and cook until skins begin to loosen, about 1 minute. Transfer onions to ice water, and let cool 2 minutes. Remove onions from ice water, and carefully trim stem and root ends; use fingers to rub and peel off skins.<\/p>\n<\/li>\n<li id=\"mntl-sc-block_16-0\" class=\"comp mntl-sc-block mntl-sc-block-startgroup mntl-sc-block-group--LI\">\n<p id=\"mntl-sc-block_17-0\" class=\"comp mntl-sc-block mntl-sc-block-html\">Stir together butter and 2 1\/2 tablespoons suya spice mix in a small bowl; set suya butter aside.<\/p>\n<\/li>\n<li id=\"mntl-sc-block_20-0\" class=\"comp mntl-sc-block mntl-sc-block-startgroup mntl-sc-block-group--LI\">\n<p id=\"mntl-sc-block_21-0\" class=\"comp mntl-sc-block mntl-sc-block-html\">Unwrap steaks, and sprinkle all sides evenly with 4 teaspoons salt; let stand 20 minutes. Meanwhile, skewer okra and onions separately, spaced 1cm apart, on flat metal skewers. Brush okra and onions all over with oil, and sprinkle evenly with remaining 3\/4 teaspoon salt.<\/p>\n<\/li>\n<li id=\"mntl-sc-block_24-0\" class=\"comp mntl-sc-block mntl-sc-block-startgroup mntl-sc-block-group--LI\">\n<p id=\"mntl-sc-block_25-0\" class=\"comp mntl-sc-block mntl-sc-block-html\">Open bottom vent of a charcoal grill completely. Light charcoal chimney starter filled with briquettes. When briquettes are covered with gray ash, pour them onto bottom grate of grill, and push to one side of grill. Scatter applewood chunks over hot coals. Coat top grate with oil; place on grill. Place steaks on oiled grate over side without coals. Grill, uncovered, flipping steaks every 5 minutes, until a thermometer inserted in thickest portion registers 50\u00b0C, 25 to 30 minutes. Transfer steaks to grate directly over coals; grill, uncovered, until a thermometer inserted in thickest portion registers 60\u00b0C (for medium-rare), about 2 minutes per side, or to desired degree of doneness, smearing top side of each steak with 1 tablespoon suya butter during final 1 minute of grilling time. Transfer steaks to a cutting board, and let rest 10 minutes. Meanwhile, place okra and onion skewers on grates directly over coals; grill, uncovered, until tender and charred in spots, about 2 minutes per side. Remove from grill.<\/p>\n<\/li>\n<li id=\"mntl-sc-block_28-0\" class=\"comp mntl-sc-block mntl-sc-block-startgroup mntl-sc-block-group--LI\">\n<p id=\"mntl-sc-block_29-0\" class=\"comp mntl-sc-block mntl-sc-block-html\">Remove okra and onions from skewers, and transfer to a platter. Remove bones from steaks; thinly slice steaks against the grain into 1\/4-inch-thick slices. Arrange steak slices and bones on a platter with okra and onions. Sprinkle okra and onions evenly with remaining 1\/2 tablespoon suya spice mix (or more to taste).
