{"id":33315,"date":"2025-05-23T13:26:52","date_gmt":"2025-05-23T13:26:52","guid":{"rendered":"https:\/\/bluffmeatsupply.co.za\/touchscreen\/?post_type=recipe&#038;p=33315"},"modified":"2025-11-25T12:33:04","modified_gmt":"2025-11-25T12:33:04","slug":"lamb-shank-potjie","status":"publish","type":"recipe","link":"https:\/\/bluffmeatsupply.co.za\/touchscreen\/index.php\/recipe\/lamb-shank-potjie\/","title":{"rendered":"Lamb Shank Potjie"},"content":{"rendered":"<h3>Ingredients<\/h3>\n<ul>\n<li>2kg lamb shanks<\/li>\n<li>70g flour<\/li>\n<li>oil, for frying<\/li>\n<li>3 onions, sliced<\/li>\n<li>4 carrots, thickly sliced<\/li>\n<li>30g butter<\/li>\n<li>220 g can tomato pur\u00e9e<\/li>\n<li>1 cup red wine<\/li>\n<li>2 leeks, sliced<\/li>\n<li>2 teaspoon fresh thyme, finely chopped<\/li>\n<li>2 tablespoon parsley, roughly chopped<\/li>\n<li>2 teaspoon paprika<\/li>\n<li>3 star anise pods<\/li>\n<li>1 teaspoon dried sage<\/li>\n<li>1 tablespoon coriander seeds, crushed<\/li>\n<li>3 cups beef stock<\/li>\n<li>7 potatoes, medium unpeeled<\/li>\n<li>sea salt and freshly ground black pepper, to taste<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<h3>Method<\/h3>\n<ol>\n<li aria-level=\"1\">Start the fire\u00a0 and let it burn for 10 minutes. Then heat the potjie pot with oil.<\/li>\n<li aria-level=\"1\">Remove excess fat from the lamb shanks. Toss the shanks in the flour and coat well.<\/li>\n<li aria-level=\"1\">In the potjie port add onions, carrots, leeks and butter, then stir often until the onions are soft.<\/li>\n<li aria-level=\"1\">Add the tomato pur\u00e9e and simmer, every time it seems the pot is about to burn add a little bit of red wine and stir. Keep stirring until you\u2019ve used all the wine and the mixture is a deep, rich brown.<\/li>\n<li aria-level=\"1\">Add the lamb shanks into the pot. Stir well so they\u2019re coated in the mixture. Put the lid on and let the lamb brown for about 10 minutes.<\/li>\n<li aria-level=\"1\">Add herbs and spices and stir, then add beef stock (and water if needed) to cover the meat.<\/li>\n<li aria-level=\"1\">Bring the pot to a boil, then reduce the heat and let it simmer with the lid on for 2 hours.<\/li>\n<li aria-level=\"1\">After the stew has been cooking for 2 hours, remove the lid and add the potatoes on the simmering stew.
