{"id":33326,"date":"2025-05-22T13:25:31","date_gmt":"2025-05-22T13:25:31","guid":{"rendered":"https:\/\/bluffmeatsupply.co.za\/touchscreen\/?post_type=recipe&#038;p=33326"},"modified":"2025-11-25T12:24:02","modified_gmt":"2025-11-25T12:24:02","slug":"chicken-alfredo-pasta-bake","status":"publish","type":"recipe","link":"https:\/\/bluffmeatsupply.co.za\/touchscreen\/index.php\/recipe\/chicken-alfredo-pasta-bake\/","title":{"rendered":"Chicken Alfredo Pasta Bake"},"content":{"rendered":"<h3>Ingredients<\/h3>\n<ul>\n<li>2 chicken fillets, cut into small chunks<\/li>\n<li>2 tablespoon vegetable oil<\/li>\n<li>65g pancetta<\/li>\n<li>1 onion, finely chopped<\/li>\n<li>3 garlic cloves, finely chopped<\/li>\n<li>500g penne pasta, cooked<\/li>\n<li>40g plain flour<\/li>\n<li>220ml double cream<\/li>\n<li>470ml whole milk<\/li>\n<li>1 tablespoon Dijon mustard<\/li>\n<li>100g cheddar, grated<\/li>\n<li>200g spinach<\/li>\n<li>65g parmesan, grated<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<h3>Method<\/h3>\n<ol>\n<li aria-level=\"1\">Pour the vegetable oil into a large, deep, frying pan. Once shimmering, scatter in the pancetta. Cook until golden, then remove from the pan using a slotted spoon, leaving behind the oil. Add the chicken to the pan and sprinkle with salt and pepper. Cook until golden on all sides, around 5-6 mins. Remove from the pan and set aside.<\/li>\n<li aria-level=\"1\">Tip the onion and garlic into the pan and cook for 8-10 mins. Put the pasta on to boil at the same time. Scatter the flour into the onion and garlic mixture, and cook for 1 min. Pour in the cream and milk a little at a time, whisking between each addition, until you have a smooth sauce. Reserve a mugful of pasta water before draining.<\/li>\n<li aria-level=\"1\">Stir the mustard and cheddar into the sauce. Season well with salt and pepper, then stir in the cooked pasta, chicken, reserved pancetta and a good splash of pasta water \u2013 you want it to be quite saucy.<\/li>\n<li aria-level=\"1\">Stir in the spinach a handful at a time to wilt, then transfer everything to an ovenproof dish. Sprinkle with parmesan over the top and some more black pepper.<i>\u00a0 <\/i>When you\u2019re ready to cook, heat the oven to 180\u00b0C..
