Beef Curry

Ingredients

  • 600g Fresh beef curry pieces
  • 1 teaspoon chilli powder
  • 1 large onion
  •  1 teaspoon ground cumin
  • 3 cloves of garlic
  •  1 tablespoon garam masala
  • 2 cm fresh ginger
  •  5 cups beef stock (broth)
  • 3 large tomatoes
  •  fresh parsley or coriander to garnish
  • 1 teaspoon turmeric
  • 3 tablespoon vegetable oil
  • 2 bay leaves
  • 2 tablespoon Greek yogurt
  • salt and pepper to taste

Method

1. Heat oil in a pot, add the cubed beef, season with salt and pepper, and brown it. Remove the beef from the pan and set it aside.

2. In the same pan, add the chopped onion and cook on low to medium heat until golden. Stir in the garlic, ginger, and spices, and let it cook for about 30 seconds to release the flavours.

3. Add the chopped tomatoes and cook until they become slightly soft. Return the beef to the pot, pour in half of the stock, and turn the heat to medium. Cover with a lid and let it cook until the beef is tender, adding the rest of the stock as needed.

4. Once the beef is tender and the sauce has thickened, stir in the yoghurt (make sure it’s at room temperature to prevent curdling) and cook for another 5 minutes. Add the seasoning with salt and pepper to taste.

5.Remove from heat, garnish with fresh parsley, and enjoy! Feel free to use whatever ingredients you have on hand for this recipe.
