Classic Chicken Parmesan

Ingredients

  • 4 chicken fillets
  • 1/4 cup plus 1 tablespoon extra-virgin olive oil
  • 3 cloves garlic, finely chopped
  • 1/2 teaspoon red pepper flakes
  • 1 410g can tomato puree
  • 1/2 cup plus 4 tablespoons grated parmesan cheese
  • 1/2 cup finely chopped fresh basil
  • 1 cup all-purpose flour
  • Kosher salt and freshly ground pepper
  • 3 large eggs
  • 1 1/2 cups grated mozzarella cheese (about 200g)
  • Method
  1. Place 4 chicken fillets between pieces of plastic wrap and pound them with a meat mallet or heavy skillet. Heat 1 tablespoon of olive oil in a medium pot over medium heat. Add the garlic and red pepper flakes. Stir and cook until the garlic softens (about 1 minute).
  2. Add the tomato puree. Rinse the can with 1 cup of water and pour it into the pot. Let it simmer until the sauce thickens slightly (about 10 minutes).
  3. Whisk in 1/2 cup of parmesan and the basil. Spread 1/2 cup of the sauce in a 3-quart baking dish.
  4. Preheat the broiler. In a shallow dish, mix the flour with 1/2 teaspoon of salt and 1/2 teaspoon of pepper.
  5. In another shallow dish, beat the eggs with 1/2 cup of parmesan. Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Dip the chicken cutlets in the flour, shake off the excess, and then dip them in the egg mixture. Carefully place them in the skillet and fry until golden brown (2 to 3 minutes per side).
  6. Transfer the cooked cutlets to the baking dish. Add 2 more tablespoons of olive oil to the skillet and repeat with the remaining chicken. Combine the mozzarella with the remaining 4 tablespoons of parmesan.

Sprinkle half of the cheese mixture over the chicken, add the rest of the sauce, then top with the remaining cheese.

Broil until the cheese melts (about 2 minutes).
