Roasted Lamb Rack, Fresh Veggies and Garlic Mash
Ingredients
- 3 finger lamb rack
- 2 cloves of fresh garlic
- ½ red onion
- Fresh rosemary
- Fresh mint
- Salt & pepper
- 2tbls olive oil
- Assorted roast vegetables
- 1tbs butter
- 100ml fresh cream
- Garlic salt
Method
- Finally chop all fresh ingredients and mix all together
- Rub them onto the lamb rack making a crust
- Lay lamb rack in some foil and place in oven dish.
- Pre heat oven to 180C
- Place lamb rack into the oven and roast for 45min.
- Next gather your roast veg and add these veggies to the same oven dish as your lamb rack at roast for 30min
- When taking the lamb rack out of the oven leave it to rest for about 3/4min before serving.
Creamy Garlic Mash
- Boil 3 potatoes for about 20/30min
- Drain water from the potatoes and add 1tbs butter, 100ml fresh cream, garlic salt and pepper for taste.
