Roasted Lamb Rack, Fresh Veggies and Garlic Mash

Ingredients

  • 3 finger lamb rack
  • 2 cloves of fresh garlic
  • ½ red onion
  • Fresh rosemary
  • Fresh mint
  • Salt & pepper
  • 2tbls olive oil
  • Assorted roast vegetables
  • 1tbs butter
  • 100ml fresh cream
  • Garlic salt

Method

  1. Finally chop all fresh ingredients and mix all together
  2. Rub them onto the lamb rack making a crust
  3. Lay lamb rack in some foil and place in oven dish.
  4. Pre heat oven to 180C
  5. Place lamb rack into the oven and roast for 45min.
  6. Next gather your roast veg and add these veggies to the same oven dish as your lamb rack at roast for 30min
  7. When taking the lamb rack out of the oven leave it to rest for about 3/4min before serving.

Creamy Garlic Mash

  1. Boil 3 potatoes for about 20/30min
  2. Drain water from the potatoes and add 1tbs butter, 100ml fresh cream, garlic salt and pepper for taste.
